Nitriti, koji se prirodno nalaze u mnogim vrstama mesa i nekim vrstama povrca, a ciju koncentraciju u našoj hrani posebno povecava obilato djubrenje azotnim djubrivima, u ljudskom organizmu mutiraju u druge, kancerogene spojeve. Te mutacije mogu blokirati spojevi "cistaci" nitrita koji se nalaze npr. u shiitakeu, Zanimljivo je da prisutnost "cistaca" tioprolina u sirovoj shiitake nije moguce utvrditi dok ga u kuvanoj ima cak 843 mg/100 g gljiva. Slicno je npr. i s vitaminom D, uz ciji je manjak u ishrani vezano znatno ucestalije obolevanje od raka dojke i debelog creva: svega 2 g na suncu sušene shiitake sadrži skoro punu preporucenu dnevnu kolicinu D vitamina.
